Ingredients

  • 3 oz semisweet chocolate chips
  • 0.5 cups rolled oats
  • 2 tsp honey
  • 0.25 cups shredded coconut

Instructions

  1. Place peanut butter, honey, and chocolate chips in a large, microwave-safe bowl; cover with plastic wrap. Microwave until peanut butter and chocolate melt, 30-45 seconds; whisk until smooth.
  2. Stir in oats, coconut, and a pinch of salt until evenly combined. Transfer mixture to the refrigerator and chill, uncovered, for 5-10 minutes. TIP: Be careful not to over-chill, or mixture will become too hard to roll!
  3. Once cool enough to handle, roll oat mixture into 8-10 1-inch balls. TIP: To keep the mixture from sticking, lightly oil your hands before starting!
