Apple & Parmesan Green Salad with Almonds & Balsamic Dressing | Serves 2

The classic pairing of apple and Parmesan gets an upgrade with the addition of almonds, cucumber and parsley. Finish it off with a drizzle of balsamic dressing.

Ingredients

2 servings
  • olive oil
  • 1 cucumber
  • 1 red apple
  • 1 packet roasted almonds
  • 1 bag parsley
  • 1 bag spinach & rocket mix
  • balsamic vinaigrette dressing
  • 1 packet parmesan cheese

Instructions

  1. • Thinly slice cucumber into half-moons. Thinly slice apple into wedges.
  2. • Roughly chop roasted almonds and parsley leaves.
  3. • In a medium bowl, combine salad leaves, shaved Parmesan cheese, cucumber, apple, a pinch of salt and pepper and a drizzle of olive oil.
  4. • Transfer apple and Parmesan green salad to a serving dish.
    • Drizzle with some balsamic vinaigrette dressing.
    • Sprinkle with almonds and parsley to serve. Enjoy!
