Garlic Baby Broccoli & Green Beans with Lemon & Feta Cheese | Serves 2

This abundant bowl of green goodness is sure to put a pep in your step! With lemon zest, chilli and parsley, there's plenty of zing and a gentle kick of heat, while feta adds a delicious creamy touch.

Ingredients

2 servings
  • olive oil
  • 1 bag baby broccoli
  • 1 bag green beans
  • 1 garlic
  • 0.5 lemons
  • 1 bag parsley
  • pinch chilli flakes
  • 0.25 packets cow's milk feta

Instructions

  1. • Trim green beans. Finely chop garlic.
    • In a medium frying pan, heat a drizzle of olive oil over medium-high heat. Cook baby broccoli and green beans with a dash of water, tossing, until just tender, 4-5 minutes.
    • Add garlic and cook until fragrant, 1-2 minutes.
  2. • While the greens are cooking, zest lemon to get a pinch, then slice into wedges. Roughly chop parsley.
  3. • In a large bowl, combine lemon zest, a squeeze of lemon juice, chilli flakes (if using) and a pinch of salt and pepper.
    • Add the garlic greens and toss to coat.
    TIP: Season the garlic greens in a serving dish to save on washing up!
  4. • Transfer garlic greens to a serving dish.
    • Crumble over feta (see ingredients) and garnish with parsley.
    • Serve with any remaining lemon wedges. Enjoy!
