Super Quick Greek Inspired Pork Stew with Olives and Greek Salad Cheese

Ingredients

  • 240 gr british pork mince
  • 1 sachet dried oregano
  • 150 gr basmati rice
  • 60 gr tomato puree
  • 10 gr chicken stock paste
  • 40 gr baby spinach
  • 30 gr olives
  • 50 gr greek style salad cheese
  • 1 tbsp honey
  • 150 ml water for the sauce
  • 20 gr butter
  • 360 gr british pork mince
  • 1 sachet dried oregano
  • 225 gr basmati rice
  • 90 gr tomato puree
  • 15 gr chicken stock paste
  • 100 gr baby spinach
  • 45 gr olives
  • 100 gr greek style salad cheese
  • 1.5 tbsp honey
  • 225 ml water for the sauce
  • 30 gr butter
  • 480 gr british pork mince
  • 2 sachets dried oregano
  • 300 gr basmati rice
  • 120 gr tomato puree
  • 20 gr chicken stock paste
  • 100 gr baby spinach
  • 60 gr olives
  • 100 gr greek style salad cheese
  • 2 tbsp honey
  • 300 ml water for the sauce
  • 40 gr butter

Instructions


  1. Boil a half-full kettle.
    Meanwhile, pop a frying pan on medium-high heat.
    Once hot, fry the pork mince and dried oregano, 5-6 mins. Break up the mince as it cooks.
    Next, pour the boiled water into a saucepan with 1/4 tsp salt on high heat. Boil the rice, 10-12 mins.

  2. Drain the fat from the pork. Season with salt and pepper. IMPORTANT: Wash hands and utensils after handling raw meat. Cook so there's no pink in the middle.
    Next, add the tomato puree, fry for 1 min.
    Stir through the chicken stock paste, honey and water for the sauce (see pantry for both). Simmer for 4-5 mins.
    Once the rice is cooked, drain, pop back in the pan and cover.

  3. Add the spinach to the stew in handfuls, making sure it’s piping hot, 1-2 mins.
    Remove from the heat and stir in the olives and butter (see pantry for amount).
    Taste and season with salt and pepper. Add a splash of water if needed.

  4. Share the rice between your bowls.
    Spoon over your pork stew.
    Crumble over the Greek style salad cheese.
